A NUTRIENT-RICH SALAD FOR ANY SEASON

- INGREDIENTS
- SALAD
- 2-cups cooked QUINOA
- 1 cup thinly sliced CUCUMBERS
- 1 cup CHERRY TOMATOES, halved
- 1/4 cup YELLOW BELL PEPPER, diced
- 1/4 cup ORANGE BELL PEPPER, diced
- 1/4 cup RED ONION, minced
- 1/2 cup FETA CHEESE
- 2 Tbsp PARSLEY, chopped
- 1 cup cooked CHICKPEAS, rinsed and drained
- 1/4 cup KALAMATA OLIVES, sliced
- DRESSING
- 1/4 cup OLIVE OIL
- 1 tsp DIJON MUSTARD
- 2 Tbsp RED WINE VINEGAR
- 1 Tbsp LEMON JUICE
- 1/4 tsp GARLIC POWDER
- 1/4 tsp ONION POWDER
- 1/2 tsp DRIED OREGANO
- SALT and PEPPER to taste
- DIRECTIONS
- Toss SALAD INGREDIENTS together
- Combine DRESSING ingredients in a jar and shake until well-combined
- Pour DRESSING over SALAD and toss lightly to coat
- Sprinkle with PARSLEY
