- 1/2 c raw baby SPINACH
- 1/4 c PUMPKIN SEEDS
- 1/2 c dried chopped APRICOT
- VINAIGRETTE
- DIRECTIONS
- In a large bowl, combine LENTILS, TOMATOES, SPINACH, PUMPKIN SEEDS, and APRICOTS
- Drizzle VINAIGRETTE over salad
- Stir ingredients well and let sit 15 minutes beore serving
