RECIPE ~ Cabbage Croquettes

INGREDIENTS
3 c CABBAGE, sliced1/4 tsp SALT
1/2 c ONION, chopped1/4 tsp BLACK PEPPER
2 CLOVES GARLIC, minced2 EGG SUBSTITUTES
1/2 c CORN MEAL or CRUSHED CORN FLAKES
INSTRUCTIONS
1. Boil SLICED CABBAGE for 10 minutes; drain thoroughly and cool
2. Saute onion in a small amount of oil; add GARLIC and continue to saute until garlic is lightly browned
3. Squeeze excess water from cooled cabbage and stir in the sauteed onion and garlic
4. Stir in EGG SUBSTITUTES, SALT, PEPPER, and CORN MEAL or CORN FLAKES
5. Mix well and shape into flat patties
6. Bake at 400 F until golden brown
NOTE: I passed the finished croquettes through the CORN FLAKES before baking for extra-crunchy croquettes
