Beet and Apple Salad

The varied tastes and textures of beets, apples, pistachios, and greens combine with a sweet and sour vinaigrette to make this salad as delicious as it is nutritious.

SALAD BOWL1 APPLE, THINLY SLICED
SERVES 41 c LETTUCE
1/2 c PISTACHIOS, PEELED
2 Tbsp HONEY
2 Tbsp WHITE WINE VINEGAR
2 Tbsp DIJON MUSTARD
6 Tbsp OLIVE OIL
