Fresh Figs and Walnuts Salad Recipe

Arugula, fresh figs, walnuts, and avocado slices combined with a tasty vinaigrette. Easy, tasty, and nutritious.

PREPARATIONINGREDIENTS
PREP 10 min2 c ARUGULA
COOK 04 FRESH FIGS, HALVED
SALAD BOWL, KNIFE1 SMALL AVOCADO, PITTED AND SLICED
SERVES 21/2 c WALNUTS, COARSELY CHOPPED
1/2 c OLIVE OIL
1/4 c BALSAMIC VINEGAR
2 CLOVES GARLIC, MINCED
1 Tbsp DIJON MUSTARD
1 tsp MAPLE SYRUP
SALT AND PEPPER TO TASTE
INSTRUCTIONS
1. Combine OLIVE OIL, BALSAMIC VINEGAR, GARLIC, DIJON MUSTARD, and MAPLE SYRUP in blender. Add SALT and PEPPER to taste. Set aside.
2. Lightly toss ARUGULA, FIGS, WALNUTS, and AVOCADO SLICES.
3. Add the VINAIGRETTE just before serving.
