Fig and Avocado Salad

Arugula, fresh figs, walnuts, and avocado slices are combined with a tasty vinaigrette.

INGREDIENTS

  • 2 c ARUGULA
  • 4 FRESH FIGS, HALVED
  • 1 SMALL AVOCADO, PITTED AND SLICED
  • 1/2 c WALNUTS, COARSELY CHOPPED
  • 1/2 c OLIVE OIL
  • 1/4 c BALSAMIC VINEGAR
  • 2 CLOVES GARLIC, MINCED
  • 1 Tbsp DIJON MUSTARD
  • 1 tsp MAPLE SYRUP
  • SALT AND PEPPER TO TASTE

INSTRUCTIONS

  1. Combine OLIVE OIL, BALSAMIC VINEGAR, GARLIC, DIJON MUSTARD, and MAPLE SYRUP in blender. Add SALT and PEPPER to taste. Set aside.
  2. Lightly toss ARUGULA, FIGS, WALNUTS, and AVOCADO SLICES.
  3. Add the VINAIGRETTE just before serving.
