- 2 c ARUGULA
- 4 FRESH FIGS, HALVED
- 1 SMALL AVOCADO, PITTED AND SLICED
- 1/2 c WALNUTS, COARSELY CHOPPED
- 1/2 c OLIVE OIL
- VINAIGRETTE
- 1/4 c BALSAMIC VINEGAR
- 2 CLOVES GARLIC, MINCED
- 1 Tbsp DIJON MUSTARD
- 1 tsp MAPLE SYRUP
- SALT AND PEPPER TO TASTE
- INSTRUCTIONS
- Combine OLIVE OIL, BALSAMIC VINEGAR, GARLIC, DIJON MUSTARD, and MAPLESYRUP in blender. Add SALT and PEPPER to taste. Set aside
- Lightly toss ARUGULA, FIGS, WALNUTS, and AVOCADO SLICES.
- Add the VINAIGRETTE just before serving.
