- INGREDIENTS
- 2 medium EGGPLANTS, sliced, salted, rinsed
- 1 Tbsp CHIA, soaked in 2 Tbsp WATER for 30 minutes
- 1 c CORN MEAL
- 1 Tbsp ITALIAN SEASONING
- 2 Tbsp OLIVE OIL
- INSTRUCTIONS
- Whisk CORN MEAL, SALT, and ITALIAN SEASONING
- Dip EGGPLANT slices in CORN MEAL, then CHIA mixture, then CORN MEAL AGAIN
- Place strips on a prepared baking sheet
- Bake for 20-25 minutes at 400º F until golden brown and crisp
