Plant-based Recipes

I am always on the lookout for easy recipes with a few familiar ingredients. When a recipe calls for something I’ve never heard of, my enthusiasm fades fast. On the other hand, I like to try food from countries and cultures other than my own, and ingredients that seem exotic to me are often everyday fare in another culture, so I include notes about foods that may be unfamiliar to you.

My focus for this list has been to bring together recipes for simple dishes in small amounts because fresh-made is usually better than left over, and many of us are making meals for just one or two people. It is easier for me to multiply than to divide, so if I’m cooking for a crowd or batch cooking to freeze, I just double or triple the recipe!
