Chia “Egg” / “Huevo” de Chia

Eggs provide structure, moisture and richness; they act as a leavening ingredient. Flax gel needs help with leavening, but it makes a satisfactory substitute when eggs are called for in many recipes for baked goods.


  • PREPARATION: 15 minutes
  • EQUIPMENT: coffee grinder


  • 1 Tbs ground chia seeds
  • 3 Tbs water


  1. If you are starting with chia seeds instead of prepared chia powder, grind the seeds in a coffee grinder.
  2. Combine 3 Tbs WATER with 1 Tbs GROUND CHIA.
  3. Stir well and let set for at least 10 minutes before using.
