Eggs provide structure, moisture and richness; they act as a leavening ingredient. Flax gel needs help with leavening, but it makes a satisfactory substitute when eggs are called for in many recipes for baked goods.
- PREPARATION: 15 minutes
- EQUIPMENT: coffee grinder
- 1 Tbs ground chia seeds
- 3 Tbs water
- If you are starting with chia seeds instead of prepared chia powder, grind the seeds in a coffee grinder.
- Combine 3 Tbs WATER with 1 Tbs GROUND CHIA.
- Stir well and let set for at least 10 minutes before using.
