Cashew Mayonnaise

  • PREPARATION soak overnight, 15 minutes to blend
  • NO COOK TIME
  • EQUIPMENT blender
  • MAKES 1 cup
  • 1 c whole cashews
  • 1 tsp lemon juice
  • 1 tsp white vinegar
  • 1/2 tsp nutritional yeast
  • 1/4 tsp dijon mustard
  • 3/4 tsp salt
  • 1/4 – 1/3 c water
  1. Soak 1 c WHOLE CASHEWS overnight.
  2. Drain.
  3. Blend with 1 t LEMON JUICE, 1 t WHITE VINEGAR, 1/2 t NUTRITIONAL YEAST, 1/4 t DIJON MUSTARD, 3/4 t SALT, 1/4 – 1/3 C WATER.

Will keep in refrigerator up to 10 days.
