Sauteed nopales are a tasty taco ingredient as well as a hearty side dish
PREPARATION | INGREDIENTS |

PREP 10 min | 2 c NOPAL CACTUS, RINSED AND CHOPPED, THORNS REMOVED* (see video below) |
COOK 10-15 min MED HEAT | 1 CLOVE GARLIC, FINELY CHOPPED |
NON-STIC SKILLET | 1 TOMATO, CHOPPED |
SERVES 4 | 1 Tbsp OIL, WATER, or VEGETABLE BROTH |
INSTRUCTIONS |

1. Heat OLIVE OIL, WATER or BROTH to medium temperature. |
2. Add GARLIC and sautee lightly |
3. Add TOMATO and NOPALES and stir lightly |
4. Lower heat and sautee 10-15 minutes until nopales turn dark green |
*If you are starting with fresh uncut nopales, clean and remove spines and nodes. This video shows how to do that.
