Cooked beans may be used in recipes that call for canned product. Salt and pepper are all you need for a tasty dish, but you can add other ingredients like garlic and onions, to suit your taste.
- 1 c dried BEANS
- 2 c WATER for soaking
- 3 c WATER for cooking
- SALT and PEPPER to taste
- Clean BEANS and wash thoroughly
- Cover BEANS with WATER and soak overnight or 8 hours
- Pour off the soaking water and rinse thoroughly
- Add WATER for cooking
- Bring to a full boil, lower heat and continue cooking until beans have the desired consistency Add SALT and PEPPER, continue cooking 5 more minutes
This basic method is based on pinto beans, but, with some variations in the soaking time and the amount of water, it can be used for all kinds of dried legumes.
